While looking for something tasty to make we stumbled across this delicious recipe by Dan Pearson at Wild Fennel Co. - thank you very much :)
This dish is well worth the wait! Make more than you think you'll need... you'll regret it if you don't!
- 2 packets of Havoc Streaky Bacon (around 1kg of streaky bacon)
- 200ml of dark beer (like this one from Ark Brewery)
- 200ml maple syrup
- Wild Fennel Co. Pocket Pepper
Mix the dark beer and maple syrup together.
Lay the streaky bacon in a shallow dish and pour over the beer mixture. Cover and leave to marinate overnight in the fridge.
Remove the bacon, pat dry and place on a greased baking tray. Strain the marinade and freeze it for next time.
Sprinkle the bacon generously with the Wild Fennel Co. Pocket Pepper and cook under a hot grill until crisp.
Eat with avocado and a poached egg on toast, in a classic bacon sandwich, or as is straight from the grill!
Be sure to save any excess fat from cooking for Sunday potatoes... Enjoy!
